Favorite Recipes


Here is a recipe I requested when I saw it in the comments.
Kathee was so enthusiastic about this salad,
I had to see what was in it and asked her to pass it along.

She said she would eat this salad every day.
She said if she could eat only one thing...this would be it.

That is very enticing, isn't it?

I promise to make it when we get back from San Fran.
But until then....

You might like to try it before me!





Grape Salad
From Kathee

8 oz. sour cream
8 oz. neufchatel cream cheese, softened
1 cup granulated sugar
2 lbs whole red or green seedless grapes, (I use a mix of both) washed and completely dried. (Best when the grapes are firm and crisp.)

Mix together the sour cream, cream cheese and sugar with an electric mixer.

Put the grapes into a 9”x13” glass dish. (One layer to cover the bottom.)

Spoon the sour cream/cream cheese mixture over the grapes and spread to cover.

Sprinkle over top:

½ cup of brown sugar
1 cup chopped pecans, toasted
(Place pecans on a cookie sheet and put in oven set @ 350 degrees for approx. 5 min…stir and watch closely so they don’t burn. Cool.)

Salad may be completely assembled and served the same day or the first part of the salad maybe made the night before. On the 2nd day add the brown sugar and pecans about two hours before serving. (The brown sugar will “melt” into the cream cheese topping.) Cover with plastic wrap and keep refrigerated until ready to serve.

Antoinette's Holiday Potato Chip Cookies

Heat oven to 300 degrees

1 pound (4 sticks) of butter (don't replace butter with margarine)
1 cup of sugar
3 1/4 cups of flour
2 teaspoons of vanilla (use the good stuff)
1 1/2 cups of crushed potato chips. I find the Lays Wavy Potato Chips work best. (Put chips in a large zip-lock bag and smash them with your fingertips.)

Cream the butter and the sugar well. Gradually add flour and vanilla.

Next, fold in the crushed potato chips.

Drop by teaspoonful on an ungreased cookie sheet. Flatten (a bit) with a fork.

Bake 18-20 minutes or until edges are golden brown

Once cooled, sprinkle with confectioners sugar.

Makes 3 1/2 dozen
